Servings: 4 people
- Low-fat cooking spray
- 500 g very lean minced beef
- 1 onion finely diced
- 2 garlic cloves crushed
- 1 beef stock cube
- 2 tbsp tikka curry powder
- 1 tin chopped tomatoes
- 1 tin chickpeas drained
- 1/2 tin hot water
- 2 handfuls frozen peas or petit pois
- 2 handfuls sweetcorn
- salt and pepper to taste
- fresh coriander optional
- fat-free natural yoghurt to serve
- cooked rice to serve
Spray a large non-stick frying pan with low-fat cooking spray. Add the onion, garlic and minced beef and cook until the beef is browned.
Stir in the tikka curry powder and cook for 2 minutes. Add chilli powder too if you prefer a spicier curry.
Add the chickpeas and chopped tomatoes.
Half-fill the empty tomato tin with hot water, dissolve the beef stock cube in it and pour into the pan.
Simmer for around 15 minutes. This is a good time to cook your rice.
Add the peas and sweetcorn near the end of cooking. The sauce should reduce until it is thicker rather than runny. Add a splash of boiling water if you prefer more sauce.
Taste and season with salt and pepper.
Serve with cooked rice, a spoonful of fat-free natural yoghurt and coriander if you like it.
For extra heat, add chilli powder with the curry powder.

And yes, coriander is completely optional. The original cook described it as “the Devil’s weed”, so you are in safe company if you leave it off!
