Rocky road 

Rocky road is so easy to make and it is a simple crowd pleaser that is always a winner. 

Ingredients: 

  • 200g dark chocolate 
  • 100g white chocolate 
  • 150g marshmallows
  • 150g digestive biscuits or cookies 
  • 100g mixed nuts 
  • 50g raisins 
  1. Heat a pan over the hob with some water. In a glass bowl, add your dark chocolate and place this over the simmering pan, ensuring that the bowl doesn’t come into direct contact with the water. Once the chocolate has melted, allow it to cool slightly. 
  2. Crush up your biscuits or cookies, chop your white chocolate, and dump all of your ingredients into the melted chocolate. 
  3. Mix well and then add to a baking sheet, before chilling and cutting into pieces. 

Loaded halloumi wraps 

These simple wraps are one of the best brunch snacks you can bring to your next business lunch and they will be a great option for vegetarians in the office. 

Ingredients: 

  • 400g halloumi, sliced 
  • 8 tortilla wraps 
  • Houmous 
  • Baby spinach 
  • Beef tomato slices
  • Tzatziki 
  1. In a large frying pan, fry off your halloumi until brown and crispy on both sides. 
  2. On your tortilla wraps, spread some Houmous and then layer up with some spinach, tomato slices, halloumi, and a dollop of tzatziki. 
  3. Wrap tightly and then cut into small inch pieces and place on a platter. 

Homemade pizzas

Homemade pizza is one of the best meals for a crowd and these simple pizzas will be a winner at any business brunch! 

Ingredients: 

  • 500g strong bread flour
  • 7g dry active yeast 
  • 325ml lukewarm water 
  • 1 tbsp olive oil 
  • One tsp sugar 
  • 1 tsp salt 
  • Tomato sauce 
  • Cheeses – mozzarella, cheddar, Parmesan
  • Toppings of your choice 
  1. In a bowl, add your water, yeast, oil and sugar and leave for 10 minutes. 
  2. In another bowl, mix your flour and salt. Add the wet into the dry and mix until a dough starts to form. Turn out into a floured surface. 
  3. Knead for 10 minutes and leave to prove in an oiled bowl with cling film for 2 hours. 
  4. Punch out the air and form into 6-8 balls. 
  5. Roll out into pizza shapes and add your sauce, cheese, and toppings. 
  6. Bake in the oven at 220C for 10-15 minutes.
