- Butter
- Caster Sugar
- Eggs
- Lemon
- Caster Sugar – For the Drizzle
- Lemon Juice – For The Drizzle
- Extra – add more flavour with a handful of unwashed poppy seeds scattered on top of the drizzle.

Easy Lemon Drizzle Cake
Equipment
- 7 inch Cake Tin
- Baking Paper
- Large mixing bowl
- Wooden Spoon
- Spoons
- Small bowl
Ingredients
- 125 g Self Raising Flour
- 125 g Butter – softened
- 125 g Caster Sugar
- 2 Eggs
- 1 Lemon
- 50 g Caster Sugar For the Drizzle
- 1 tbsp Lemon Juice For The Drizzle
Instructions
- Preheat oven 180°C/160°C Fan/Gas 4.
- Grease a 7-inch cake tin and line with baking parchment.
- Place flour, sugar, butter, lemon zest and beaten eggs in a mixing bowl.
- Beat together with a wooden spoon until the mixture is a smooth, dropping consistency.
- Spread mixture evenly in the prepared cake tin.
- Place in oven and bake for around 20/30 minutes, until golden brown and cake feels “springy” when tapped with fingertips.
- Whilst cake is baking, mix the caster sugar and lemon juice for the drizzle.
- Pour drizzle over hot cake and leave to cool in the tin.

Recipe Notes
Our cake was baked in a loaf tin, though you could use a normal round or square cake tin.
Make sure you do not pour all the lemon drizzle in one spot as the cake will sink!
Pouring the lemon drizzle as soon as the cake is out of the oven allows it to seep through nicely. This helps to give it a lovely lemon taste on the inside too.
This particular cake was kept in the oven for 23 minutes. Next time if baked in the same tin, we would keep it in for 30 minutues.
