- Double Cream / Heavy Whipping Cream
- Bacon Lardons

Keto Cauliflower Cheese Recipe
Equipment
- Large Oven-proof Dish
- Frying Pan
- Pan
- Knife
- Chopping Board
- Spatula
- Spoon
- Large mixing bowl
Ingredients
- 1 Large Cauliflower
- 4-5 Whole Scally/Spring Onions
- 1 tsp Butter To use for cooking the bacon lardons
- 150 grams Cheddar Cheese/ Red Leicester Can add more or less
- 250 ml Double Cream (Heavy Cream) To make it creamy and sauce like
- 200 grams Soft Cheese Can add more
- 200 grams Bacon Lardons Can add more
Instructions
- Start by cutting up the cauliflower into florets and cook in a pan with boiling water for 5-10 minutes.
- In a frying pan heat the butter and crisp the pancetta – this will take a couple of minutes, giving you time to dry the pancetta with kitchen roll before the cauliflower is ready.
- Whilst those ingredients are cooking, combine the soft cheese, spring onion, cheese and cream in a large mixing bowl and combine together.
- Once the pancetta is cooked and dried on a piece of kitchen paper, combine with the mix whilst waiting for the cauliflower.
- Add more double cream if necessary to make the mix more malleable.
- When the cauliflower is cooked and drained, add to the mixture and mix all the ingredients together.
- Transfer the mixture to an oven-proof dish and sprinkle more grated cheese on top!
- Bake in the oven on the middle shelf for 25 mins at a temperature of Gas Mark 6/ 200 degrees Celsius.
- Scoop out the desired amount, leftovers can be heated up again the next day and simply enjoy

This will make a large dish which can be used to batch cook or feed a family of 6 as a side dish and contains only 5g net carbs per serving! The Keto Cauliflower Cheese recipe can easily be adapted. You can easily substitute the bacon lardons or spring onions… basically, add in what you like! By adding 250ml of double cream, the dish will be creamier, allowing for the lack of gravy with a roast. Simply use less cream to make the dish less moist. Using Red Leicester cheese will make the dish colourful and give a stronger flavour.
