Keto Pancakes Recipe – Just 4 Ingredients!

A downside to following the Keto diet is having to watch people eat foods that you cannot and this is especially heightened when it’s a special occasion. In this case, Pancake Day which is on Tuesday 1st March this year. Let’s take a look at our tried and tested Keto Pancakes recipe!

Regular pancakes are not Keto friendly as they contain far too many net carbs, however you can still enjoy fluffy keto pancakes on Shrove Tuesday too!

With most foods, there is always a Keto work around available, generally involving the type of flour you use. Keto Coconut flour pancakes are certainly different to the real thing, but you can add toppings such as whipped cream and fresh berries to add to the flavour.

Easy Keto Pancake Recipe

The main ingredients of low carb Keto pancakes are coconut flour and eggs. It really is simple to make delicious pancakes you can enjoy on a low carb diet. I managed to pick up some Groovy Food – Organic Coconut Flour (£3.50) from Tesco in order to give these pancakes a whirl.

There are many recipes for keto-friendly pancakes out there, but for the purpose of this post, I used coconut flour. However, you could choose fine almond flour to make your low carb pancake mix.

So that you are aware of the nutritional information of what is in the keto pancake mix, it is much easier to make your own. Next time I shall definitely try almond flour pancakes to weigh up which main ingredient I prefer for the best keto pancakes.

Ingredients

4 x large eggs / 5 x medium eggs
3 x tablespoons of Coconut flour – Use Organic plain white flour for normal pancakes.
Adding a little cinnamon or vanilla essence will give the pancakes a sweeter taste. Or choose Keto friendly toppings for when the pancakes are ready.
Coconut oil to fry

Keto Pancakes Method

Yes, those really are the only ingredients you need!

Start by breaking all the eggs into a bowl – I chose to use 5 medium eggs for a runnier consistency batter, but even so, it is still thicker than an original pancake batter. Hence why it makes thicker pancakes!

Add in 3 tablespoons of coconut flour – I wasn’t exact and did heap the tablespoons.

Whisk until a batter is formed.

Heat the coconut oil in the pan and drop 2 tablespoons of the mixture into the pan to create your pancake.

It will form quickly so make sure you keep your eye on the pan and flip over when formed (literally 30 seconds!)

I found the Keto pancakes had more of an eggy taste than I would have preferred however the topping of whipped cream in my case did offset this.

As you can see, the consistency is very pancake like so when eating you do not feel as if you are missing out this Pancake Day!

The mix makes smaller pancakes and you may find yourself with leftovers which can be kept in an airtight container to snack on the next day.

    • Fortunately, most things can be made to Keto restrictions and I’ve very quickly realised it’s all down to the flour that is used. Eggs are a given on the lifestyle… knowing I could have pancakes certainly made Shrove Tuesday a little easier! 🙂 xx
